Ingredients (2-3 servings)
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1 bunch of dill
1 bunch of radishes
8-10 sun-dried tomatoes
4 small garlic gloves
a few cherry tomatoes
1 tablespoon maple syrup (or other sweetener)
1 pinch sea salt or Himalayan salt
a little bit water
Cut the cauliflower into small pieces and process in a food processor until finely riced.
Cut the peppers and radishes into small cubes, chop the dill.
Combine the riced cauliflower with the vergetables in a bowl and put it aside.
Combine all sauce ingredients into a food processor or a blender. If the sauce turns out too thick, add a bit of water.
Use a mold to give the couscous a nice shape on the plate. You can mix the couscous with the sauce or serve it separately. Either way, it looks delicious!
